Magical food for Ostara/Spring Equinox

The first day of spring and the festival of chocolate…or so it feels like, which is OK with me.  Darkness and light are in balance and we now enter a time of renewal and rebirth, the Earth is beginning to stir and starts to send out the first signs that spring has arrived.  Celebrate fertility, abundance, new beginnings and put those plans and ideas into motion, get that manifesting on the move!

After your hearty Ostara lunch and all those chocolate eggs you might like to stretch your legs in the country side and look for alexanders, chickweed, dandelion, fat hen, nettles, sorrel, watercress, wild rocket, cow parsley, meadowsweet, wild garlic and primroses.

Veggies that are in season during March are; artichokes, purple sprouting, Brussels sprouts, cabbage, carrots, cauliflower, celeriac, endive, greens, leeks, lettuce, onions, parsnips, potatoes, swede and watercress.

Seasonal fruit is still a bit sparse but apples and forced rhubarb are good.

Lemon Curd Cupcakes

250g/9 oz self raising flour

250g/9 oz sugar

½ teaspoon bicarbonate of soda

270g/9 ½ oz butter, softened

4 large eggs

Zest from 4 lemons

1 ½ tablespoons lemon juice

½ jar of lemon curd (approx 150g)

For the icing:

300g/10 ½ oz butter, softened

675g/23 ½ oz icing sugar

4 tablespoons lemon juice

1 tablespoon lemon curd

Extra lemon curd to decorate

Preheat the oven to 170C/375F/Gas 5

Pop the dry ingredients into a large bowl.  Add the butter, lemon juice, zest and the eggs and beat for about a minute.  Add the milk and whisk until the ingredients are all incorporated.

Fill twelve muffin cases (or 24 fairy cake cases) with the mixture and bake in the oven for 20 minutes.  Leave to cool.

For the icing beat the butter until pale and smooth.  Sift the icing sugar in a large bowl and gradually add the butter beating well as you go.  Gradually add in the lemon juice and beat until combined.

When the cakes are cool carefully cut off the top of each cake and pop in half a teaspoon of lemon curd then put the top of the cake back on.  Then ice each cake with the butter cream icing and I like to drizzle a little extra lemon curd onto the top of each one.

Lemon Balm and Borage Refresher

Very nice drink full of the flavours of spring and the promise of summer.

1 bottle of white wine

6 sprigs of lemon balm

6 borage flowers

½ tablespoon honey

6 slices of lemon

Bottle of sparkling water

Put the lemon balm and borage flowers into a jug and add the honey and lemon slices.  Pour over the bottle of white wine, allow it to chill in the refrigerator then just before serving add sparkling water and ice to make it a nice long drink.

Lemon – love, friendship, purification

Honey – love, happiness, spirituality, wisdom, purification, health

Lemon balm – success, love, healing

Borage – psychic powers, courage

Wine – celebration!
